Winemaker's notes
The 2021 Central Otago growing season started off with a cool spring, followed by perfect weather from February through to mid April. Warm and dry weather conditions during this time gave us delicious tasting fruit and a wonderful grape harvest. Whole bunch pressed; allowed to settle overnight before being racked and inoculated. Cool fermentation over several weeks, then stopped when desired balance was achieved. Domenic and the winery team believe the 2021 vintage offered some of the best smelling ferments of all time!
